Umani Ronchi Casal di Serra Verdicchio Classico Superiore DOC,

The grapes are harvested from the 14ha Casal di Serra vineyard in Montecarotto. Ripeness is ensured by harvesting slightly later than usual, and yields are kept very low (80/90 hundredweight/hectare, less than half the usual for Verdicchio). Grapes are hand harvested and pumped into a Vaslin press. A proportion of the wine undergoes a cold soak process, which allows a better extraction of varietal characteristics.
