Celtic Promise is made by Caws Teifi Cheese and is only one of two cheeses to have clinched the title of Supreme Champion twice at the British Cheese Awards –in 1998 and 2005. Therefore, it is one of the most highly awarded, artisan raw milk cheeses in Britain. Made and ripened at Glynhynod Farm in Ceredigion it is a washed-rind cheese made with local raw/unpasteurised milk. It is initially based on a Caerphilly recipe, but then regularly cider- washed for approximately 8 weeks.
After this 8-week ripening period it develops a semi-soft texture and a pungent aroma.
It has an wonderful creamy mouth feel, and develops an intense, mature depth of flavour, revealing the complexity of the local milk, traditional pastures and lush meadows of Ceredigion
the so-called “terroir”.
Ideally accompanied by a good red or white wine or even a farmhouse cider.
