DRAGON'S BREATH (Spirit of Wales Distillery)
Daniel Dyer started distilling spirits as a hobby, after growing up in a household where food and cooking were part of everyday life and socialising.
Coming from Cornwall and having a Welsh grandfather, he felt more at home in Wales than anywhere else in the UK. After being inspired by many distilleries and tours in Europe and North America, Daniel discovered the art of distilling his own spirits after falling in love with gin in 2009.
With his understanding of botanicals, hedgerow fruits, and fermentation learned in his mother’s kitchen, combined with his endless years of reading books, he now creates new spirit concoctions while running the Spirit of Wales’ Distillery in Newport full time.
