TREFALDWYN CHEESE

Trefaldwyn Cheese was founded by Clare Jones, previously a local primary school teacher who gave up the classroom in favour of cheesemaking. She spent a while perfecting the recipe for Trefaldwyn Blue and the result is a lovely, full flavoured, soft and creamy blue cheese made from pasteurised Welsh cow’s milk.

The name Trefaldwyn comes from the Welsh for Montgomery, where Clare lives, meaning Baldwin’s town. Cheese production began on Clare’s kitchen table in the Autumn of 2018. Spurred on by friends and family who tasted those first batches, it then progressed to being produced  at a purpose built dairy within the Welsh Government Food Centre in West Wales. The cheese was originally produced in very small batches of around 70Kg, and distributed directly to delicatessens, farm shops, restaurants and hotels in the local area. 

Trefaldwyn Blue has won many great accolades including 2 stars at the Great Taste Awards, a gold at the World Cheese Awards and a bronze at the Artisan Cheese Awards and notably Best Welsh Cheese at the World Cheese Awards.

The organic milk for Trefaldwyn Cheese is produced by third generation dairy farmers in Mid Wales, on the hills above Llandyssil in a place called Cefn-Y-Coed.

A few years ago, they decided to diversify creating a sister company, Daisy Bank Dairy which provides the beautiful organic milk used for Trefaldwyn cheeses.

They are passionate about farming and the welfare of their cows which graze on lush organic grass as many days of the year as possible. They are also very keen on regenerative agriculture, improving soil health, using rotational grazing and growing grass crops that have as little impact on the environment as possible and actually help to reverse the effects of air pollution, using herbal and clover pastures, to increase cow health and pull carbon out of the atmosphere and use it as fuel to grow the grass ORGANICALLY. Organic farms on average have 50% more wildlife and mini-beasts and orgainc milk is 50% higher in omega3, and it's all the herbal and clover grass pasture that makes their milk taste so sweet.
