Hailing originally from Lancashire, Wacky Wedge's founders used to make cheese at their little house in Rossendale where theypurchased frozen raw goats milk from a farm in North Yorkshire. Unfortunately, using frozen milk limited their choice of cheesemaking and so when an unexpected opportunity arose to relocate to North Wales, they did!
After settling in, they found a location for their small herd of goats where they could make cheese using their own supply of raw, fresh goat milk. They gained more experience working with another local dairy, Cosyn Cymru who make fantastic raw Ewe's milk products and they now produce their goats' cheese in Cosyn Cymru's dairy. To increase their supply of goats' milk and their cheese production, Wacky Wedge have also teamed together with two local farms.
Wacky Wedge's products are very much raw milk focused. They feel that the added benefits of raw milk are something which should be celebrated and promoted. As well as making their own line of cheeses, they also offer other raw goat milk kefir.
