Anchioves are caught in the Spring season only, when large shoals come into the Bay of Biscay. Small boats with nets are used to catch the anchioves, in a traditional, sustainable method.
Boquerones are anchioves that have been marinated in white vinegar The fish are cleaned and filleted by hand first, before being marinated for a period in white vinegar – this is what gives them a white appearance. Once marinated to optimum flavour, they are stored in good quality Extra Virgin Olive Oil.
Yurrita was established in 1867 and is now owned by the 5th generation. Yurrita uses the finest fish, caught by traditional, sustainable methods from the Bay of Biscay.
