Bonito del Norte ('Beauty of the North') is also known as ‘White Tuna’ or ‘Long Fin Tuna’ - it can be up to 1m in length and 15-25kg in weight (smaller compared with Yellow Fin at 2m length and over 100kg in weight). The loin is a side fillet of the fish.
The Bonito is line caught in the summer months only. Once caught, the fish is freshly processed, by hand, then cooked and packed in good quality olive oil.
Yurrita was established in 1867 and is now owned by the 5th generation. Yurrita uses the finest fish, caught by traditional, sustainable methods from the Bay of Biscay.
