Da Mhile, Organic Absinthe, 69%, 70cl

10 years in the making down a bumpy lane at Glynhynod Farm in Ceredigion.

This hand-crafted absinthe has a stunning, natural warm-green colour and umami flavour. It fills your glass with aromas of aniseed and delicious herbal undertones. Beneath the bold 69% ABV, the finish is very smooth and long, with a fresh zing and precious little burn. Traditionally enjoyed with ice-cold water poured over a spoon of sugar. Da Mhile's founder, John Savage-Onstwedder, recommends it is diluted with coconut water to an ABV of around 40% and if sweetened, use organic sugar cubes. Also works well with organic lemonade.
