White Castle, Cabernet Franc Sparkling Rose

TASTING NOTES
A first for White Castle Vineyard, Wales, and the UK - their 2023 vintage Cabernet Franc Sparkling Rosé has exceeded all expectations. This complex Rosé reveals a vivid rouge hue.

Style: Elegant Brut, traditionally made sparkling wine
Nose: inviting Strawberry Aromas
Palette: On the palate, it offers a clean, crisp profile with vibrant flavours of wild forest berries, culminating in a luxurious creamy mouthfeel.

WINE MAKING
Produced using the traditional method, the grapes were hand harvested in 2023 and the juice fermented in stainless steel vats. In early 2024 White Castle inoculated the wine with a small amount of yeast and sugar to induce the secondary fermentation and bottled. The wine continued to sit on the lees for a further 18 months before being disgorged in June 2025.

FOOD NOTES
Sparkling wine tends to go very well with appetizers. It also goes well with fish and very light meals, and of course as an after-dinner celebration or toast.
